Our book is about exactly what the title says: Pizza Napoletana - The pursuit of a perfect Neapolitan pizza in a home oven, converted grill, and wood-fired oven.
To produce this book, we worked non-stop for over a year and a half, and the restaurant remained closed until it was finished. It was supposed to take three months, but things usually take longer than expected; especially when you're trying to do something really good.
We often refer to the book even today, partly to remind ourselves what hell it was to write it, and partly to use the information that holds up almost surprisingly well.
We are, to say the least, proud to have produced such a comprehensive book, even if we were a little hesitant when we released it. Here you'll find everything you need to know to get started making amazing Neapolitan pizzas. Plus, it's stylish and fun to read, if you ask us anyway :)
