'Nduja di Spilinga

Before we opened Lilla Napoli, we searched high and low for this 'Nduja, as one of our favorite pizzerias used this exact one. Since we managed to get our hands on it, it's been the only one we've used.

This 'Nduja tastes exactly as it should, with a sharp spiciness and a lot of flavor. The color is also a really lovely red, and it makes a pizza look damn good.

What's special about this one compared to others we've tried is that it's very easy to spread on the pizza. Unnecessary resistance is a flow-killer, so you want to avoid that. 'Nduja is incredibly delicious on pizza, and especially on a simple Margherita, so this is something you absolutely must try.
