Truly delicious capers from Sapori Eoliani. These are the best capers we have ever tasted, with a distinctive, intense, and overall delightful flavor. Of course, we've tried a lot of capers too. They also come from the island of Salina, which is said to produce the best capers.
If you're not very familiar with capers, you might not know the differences, which are extremely important. Capers from regular stores are in a vinegar solution, which makes them taste like pickled gherkins. It might sound strange, but once you notice it, there's no going back.
These capers, on the other hand, taste as capers should, so if you haven't tried real capers before, you might be surprised. All serious caper eaters and producers know this to be true, by the way.
These capers come salted, so before eating them, they should be soaked in water for about 60 minutes. The producer says they need to soak for several hours, but we certainly don't have the patience for that. Exactly how long depends on how salty you want them to be, so you'll have to experiment :)
If there are capers left over after desalinating them, you can store them in a glass jar.
